Honey Orange Vinaigrette Salad Dressing Ingredients: 1/4 cup orange juice 2 tablespoons apple cider vinegar 1 tablespoon Dijon -style prepared mustard 2 teaspoons honey 1/8 teaspoon cracked black pepper Directions: Mix above ingredients in a small jar with tight cover. Shake until combined. Can refrigerate for 1 week. Shake well before serving. I've used this recipe with a mix of salad greens, spinach, cranberries, sliced almonds, shredded parmesan, and mandarin orange slices. Honey Popcorn by Jeanne Kolb Mix a little butter and honey and heat until liquid in the microwave. Drizzle it over popcorn. This has become one of my favorite treats and has so many levels of flavor. Honey Garlic Chicken Ingredients: 4 chicken breasts Salt and pepper to season to taste 1 tsp. garlic powder 4 garlic cloves crushed ¼ c. honey ¼ c. water 1 TSBP. Vinegar (I prefer apple cider but any will work) ¾ tsp. soy sauce Directions: Season chicken with the salt, pepper, and garlic powder. Cook the chicken over medium heat until browned on both sides. Reduce the heat and continue to cook until it is cooked thoroughly turning every 5 minutes. Cook until chicken is 165 degrees. Drain all but about 2 TBSP. of juices from the pan and discard. Add the garlic and fry until fragrant then add the honey, water, vinegar, and soy sauce. Increase the heat to medium-high. Cook until the sauce reduces and slightly thickens (about 3-4 minutes). Serve with rice, vegetables, pasta, or a salad.
